What is happening on the soles
The soles are one of the most eccrine-dense areas of the body. That means the underside of the foot is producing watery sweat throughout the day, whether or not you notice it, in response to heat, activity, and (importantly on the palms and soles) stress and attention.
The sole's skin is also thick and adapted to load, so the sweat that reaches it does not cause many surface changes even when there is a lot of it. What it does do is coat the underside of the foot and the top of the insole, which is why the classic sign of a sweaty-sole day is a footbed that stays damp long after the shoe comes off.
What is happening between the toes
The toes themselves have plenty of sweat glands on their pads, but the more interesting anatomy is the webs between them. Those are narrow folds of skin that press together inside a shoe, especially once the sole starts to sweat.
